Herbed Kipper Pasta

Ingredients

  • 7.5 oz smoked kipper fillets
  • 13.5 oz spaghetti
  • 2 1/2 tbsp butter
  • 2 tbsp flour
  • 2 cups skim milk, warmed
  • 2 tbsp finely chopped fresh flat-leaf parsley leaves
  • 2 tbsp capers, drained, rinsed, roughly chopped

Instructions

  1. Preheat broiler. Place fish, skin-side down, on an oiled baking tray. Broil for 4 mins, or until heated through. Let cool for 10 mins. Discard skin and bones. Flake flesh into small pieces.
  2. Meanwhile, cook pasta in salted boiling water until al dente. Drain.
  3. Melt butter in a saucepan over medium heat. Cook flour, stirring, for 1 min. Gradually add milk, stirring, until mixture boils and thickens. Stir in parsley, capers, cheese and mustard. Add pasta and fish and toss to combine.
