Ingredients

  • 6 to 8 potatoes
  • 3 Tbsp. white wine vinegar
  • 1/3 cup chopped green onion
  • 1 small minced garlic clove
  • 1/4 cup chopped parsley
  • 6 slices bacon
  • 1/4 cup salad oil

Instructions

  1. Boil potatoes until tender.
  2. Cool and peel potatoes; cut into 1/4-inch slices.
  3. Sprinkle with 3 tablespoons of white wine vinegar.
  4. Chop bacon and fry until crispy.
  5. Cool bacon and add to potatoes.
  6. Add chopped green onion, minced garlic, and chopped parsley.
  7. Sprinkle with 1/4 cup salad oil.
  8. Season with salt and pepper to taste.
  9. Toss lightly to combine.
  10. Serve warm.
