- Cut zucchini into pieces 1/4-inch thick and 2 1/2-inches long.
- Heat vegetable oil in a large skillet.
- Add zucchini to the skillet, ensuring it isn't layered more than 1/2-inch thick to steam and soften without browning.
- Saute the zucchini for 4 1/2 to 5 minutes until soft and slightly transparent.
- Add minced chives, salt, and pepper to the skillet.
- Mix well and cook for another minute.
- Remove from heat and stir in butter before serving.
