Ingredients

  • 1 1/2 lb. zucchini
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. minced chives
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. butter

Instructions

  1. Cut zucchini into pieces 1/4-inch thick and 2 1/2-inches long.
  2. Heat vegetable oil in a large skillet.
  3. Add zucchini to the skillet, ensuring it isn't layered more than 1/2-inch thick to steam and soften without browning.
  4. Saute the zucchini for 4 1/2 to 5 minutes until soft and slightly transparent.
  5. Add minced chives, salt, and pepper to the skillet.
  6. Mix well and cook for another minute.
  7. Remove from heat and stir in butter before serving.
