Ingredients

  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 3/4 teaspoon cream of tartar
  • 1/2 cup apricot nectar
  • 1 teaspoon grated orange rind
  • 3/4 cup sugar
  • 6 eggs, separated
  • 1 1/2 cups sugar (for egg whites)

Instructions

  1. Sift flour, 3/4 cup sugar, and salt together.
  2. Beat egg whites with cream of tartar in a large mixing bowl until soft mounds form.
  3. Gradually add 3/4 cup sugar, beating constantly until very stiff peaks form.
  4. Mix egg yolks, apricot nectar, rum flavoring, and orange rind.
  5. Add dry ingredients to the egg yolk mixture.
  6. Beat for 1 minute with a mixer on medium speed.
  7. Gently fold in the beaten egg whites, 1/3 at a time.
  8. Pour the batter into an ungreased 10-inch tube pan.
  9. Bake at 350°F (175°C) for 45 to 50 minutes.
  10. Invert the pan and cool completely.
  11. Slice into 3 layers, spread apricot-orange filling between layers.
  12. Frost the top and sides with snowy white frosting.
