Hidden Treasure Cake

- Sift flour, 3/4 cup sugar, and salt together.
- Beat egg whites with cream of tartar in a large mixing bowl until soft mounds form.
- Gradually add 3/4 cup sugar, beating constantly until very stiff peaks form.
- Mix egg yolks, apricot nectar, rum flavoring, and orange rind.
- Add dry ingredients to the egg yolk mixture.
- Beat for 1 minute with a mixer on medium speed.
- Gently fold in the beaten egg whites, 1/3 at a time.
- Pour the batter into an ungreased 10-inch tube pan.
- Bake at 350°F (175°C) for 45 to 50 minutes.
- Invert the pan and cool completely.
- Slice into 3 layers, spread apricot-orange filling between layers.
- Frost the top and sides with snowy white frosting.
