Hoecakes are crispy, golden cornmeal pancakes with lacy edges, perfect for a hearty breakfast or snack. They are quick to prepare and full of classic Southern flavor.

Ingredients

  • 1 c. plain corn meal
  • 2 Tbsp. self-rising flour
  • enough cold water to make very thin batter

Instructions

  1. Preheat a well-greased griddle until very hot.
  2. Pour about 3 tablespoons of very thin batter onto the griddle for each hoecake.
  3. Fry until brown on one side with lacy edges.
  4. Turn and brown on the other side.
  5. Serve hot.
