A hearty scallop casserole layered with potatoes, mushrooms, onions, cottage cheese, and Cheddar, baked to creamy perfection—perfect for cozy family dinners or holiday gatherings.

Ingredients

  • 8 medium potatoes, cooked and sliced
  • 1 lb. fresh mushrooms, wiped clean and sliced
  • 2 large onions, thinly sliced
  • 4 Tbsp. butter
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. thyme
  • 1 pt. sour cream

Instructions

  1. Saute mushrooms and onions separately in butter.
  2. Combine cottage cheese and sour cream.
  3. Layer ingredients in two casserole dishes in this order: potatoes, onions, mushrooms, cottage cheese mixture.
  4. Sprinkle each layer lightly with seasonings and grated cheese.
  5. Repeat layering until all ingredients are used, ending with grated cheese on top.
  6. Cover and bake for 45 minutes at 350°F.
  7. Remove cover for the last 15 minutes of baking.
  8. Let cool slightly before serving.
  9. If baking both casseroles at once, bake together; otherwise, deliver one to a friend.
  10. It can be stored in the refrigerator for a day or two before baking.
