- Saute mushrooms and onions separately in butter.
- Combine cottage cheese and sour cream.
- Layer ingredients in two casserole dishes in this order: potatoes, onions, mushrooms, cottage cheese mixture.
- Sprinkle each layer lightly with seasonings and grated cheese.
- Repeat layering until all ingredients are used, ending with grated cheese on top.
- Cover and bake for 45 minutes at 350°F.
- Remove cover for the last 15 minutes of baking.
- Let cool slightly before serving.
- If baking both casseroles at once, bake together; otherwise, deliver one to a friend.
- It can be stored in the refrigerator for a day or two before baking.
