Ingredients

  • 4 eggs
  • 1 Tbsp. instant minced onion
  • 3/4 tsp. salt
  • 3 Tbsp. water
  • 1/4 c. butter or margarine
  • 1 c. diced tomatoes
  • 1 c. diced cooked potatoes
  • 1 c. diced zucchini or 1/2 c. chopped green pepper

Instructions

  1. Beat eggs, minced onion, salt, and water in a bowl.
  2. Melt butter in a large skillet over medium heat.
  3. Cook and stir diced tomatoes, cooked potatoes, and zucchini (or green pepper) in butter for 2 minutes.
  4. Pour the egg mixture over the vegetables in the skillet.
  5. As the eggs begin to set at the bottom and sides, gently lift cooked portions with a spatula so that uncooked egg can flow to the bottom.
  6. Avoid constant stirring. Cook until eggs are thickened throughout but still moist, about 3 to 5 minutes.
