Ingredients

  • 6 eggs
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 1/2 cups water

Instructions

  1. In a medium bowl, combine eggs, flour, salt, and water.
  2. Beat with a mixer until smooth.
  3. Let the batter stand for 30 minutes, no longer.
  4. Heat an 8-inch skillet gradually over medium heat.
  5. Pour 1/4 cup of batter into the skillet, rotating quickly to spread evenly.
  6. Cook over medium heat until the top is dry; use all batter, placing wax paper between each shell.
  7. Freeze the shells until ready to fill.
  8. Fill with your own ricotta mixture and top with sauce before serving.
