Ingredients

  • 1/2 lb dried black-eyed peas
  • 3 1/2 cups water
  • 1/4 lb bacon
  • 1 onion
  • 1/2 cup uncooked rice
  • 1 cup stewed tomatoes
  • 1/2 large green pepper
  • 1 teaspoon salt
  • black pepper
  • plain yogurt

Instructions

  1. Heat dried black-eyed peas and water to boiling in a medium saucepan. Cover and remove from heat. Let stand for 1 hour.
  2. Fry diced bacon until crispy; drain excess fat.
  3. Add sliced onion to the peas; cover and simmer until peas are tender, about 1 to 1.5 hours.
  4. Stir in uncooked rice, black pepper, stewed tomatoes, and chopped green pepper.
  5. Cover and simmer, stirring occasionally, until rice is tender, about 25 minutes. Add additional water if necessary.
  6. Serve each portion with a dollop of plain yogurt.
