"Hot" Meat Balls

Ingredients

  • 1 1/2 lb. ground chuck
  • 1/2 cup hot enchilada sauce
  • 2 cups cornbread crumbs
  • 1 teaspoon salt
  • 1 cup hot enchilada sauce
  • 1 (8 oz.) can tomato sauce

Instructions

  1. Mix ground chuck, hot enchilada sauce, cornbread crumbs, and salt well. Roll into small (nickel-sized) balls.
  2. Bake in an ovened edged pan at 350°F for 15 to 18 minutes.
  3. Heat the remaining enchilada sauce and tomato sauce separately.
  4. Pour the heated sauces over the drained meatballs in a casserole dish.
  5. Heat until ready to serve. Can be served with toothpicks.
