Ingredients

  • 2 (1 lb.) cans beets
  • 1 cup brown sugar
  • 1/2 cup vinegar
  • 1 heaping tablespoon pickling spice
  • 2 tablespoons cornstarch

Instructions

  1. Drain liquid from beets into a large pot.
  2. Mix in sugar, vinegar, and pickling spices.
  3. Bring to a boil and simmer for 10 minutes.
  4. Strain the liquid and discard the spices.
  5. Bring the strained liquid to a boil again.
  6. Dissolve cornstarch in cold water.
  7. Slowly stir the cornstarch mixture into the boiling liquid until slightly thickened.
  8. Add the beets and simmer to allow flavors to meld.
  9. Serve hot as a side dish.
