Ingredients

  • 8 eggs
  • 6 1/2 cups pineapple juice
  • 1 pint cream
  • 1 cup sugar
  • 1/4 cup chopped orange peel

Instructions

  1. Separate egg yolks and whites.
  2. Beat yolks thoroughly with half the sugar.
  3. Beat whites thoroughly with remaining half of sugar.
  4. Bring pineapple juice to a boil.
  5. Add cream to the boiling pineapple juice; reheat.
  6. Pour the hot mixture over the beaten egg yolks and sugar, stirring well.
  7. Fold the beaten egg whites into the hot mixture gently.
  8. Sprinkle with chopped orange peel before serving.
