Ingredients

  • 10 large potatoes, peeled, cooked, cooled and cubed
  • 1 large green pepper, minced
  • 1 small jar pimento, cut up
  • 3/4 lb Velveeta cheese, cubed
  • 1 stick oleo, melted
  • salt and pepper to taste
  • sprinkle of parsley
  • 1/2 cup corn flakes or crushed potato chips

Instructions

  1. Mix the peeled, cooked, cooled, and cubed potatoes with minced green pepper, cut-up pimento, cubed Velveeta cheese, melted oleo, salt, and pepper.
  2. Sprinkle with parsley on top of the mixture.
  3. Top the casserole with corn flakes or crushed potato chips.
  4. Bake in a preheated oven at 350°F (175°C) for 45 minutes until bubbly and golden.
