Ingredients

  • 4 1/2 cups elbow macaroni, cooked, drained and cooled
  • 1 1/2 cups Colby cheese
  • 1 cup celery, sliced
  • 6 tablespoons onion, chopped
  • 6 tablespoons low-fat mayonnaise
  • 2 tablespoons vinegar
  • 1/4 teaspoon pepper
  • pickle slices
  • pimientos

Instructions

  1. Mix together cooked macaroni, Colby cheese, sliced celery, and chopped onion.
  2. Combine the macaroni mixture with mayonnaise, vinegar, and pepper, stirring well.
