Ingredients

  • 1/8 cup hot water
  • 1 package active dry yeast
  • 5 cups flour
  • 1 1/3 cups warm water
  • 1/3 cup brown sugar
  • extra flour
  • coarse kosher salt

Instructions

  1. Preheat the oven to 475°F and grease a cookie sheet.
  2. In a large bowl, mix 1/8 cup hot water and the active dry yeast until combined.
  3. Add 1 1/3 cups warm water and 1/3 cup brown sugar to the mixture and stir slowly.
  4. Add 5 cups flour to the bowl and mix until smooth and not sticking to the sides; knead the dough.
  5. Divide the dough into golf ball-sized portions and shape each into a pretzel form.
  6. Fill a frying pan with water and bring to a gentle boil.
  7. For each cup of water used, add 1 tablespoon baking soda to the boiling water.
  8. Place the pretzels into the boiling water for 30 seconds, then remove and place on the prepared cookie sheet.
  9. Sprinkle coarse kosher salt over the pretzels.
  10. Bake in the oven for 8 minutes until golden brown.
  11. Pretzels can be frozen before baking if desired.
