- In a large bowl, mix 1/8 cup hot water and the active dry yeast until combined.
- Add 1 1/3 cups warm water and 1/3 cup brown sugar to the mixture and stir slowly.
- Add 5 cups flour to the bowl and mix until smooth and not sticking to the sides; knead the dough.
- Divide the dough into golf ball-sized portions and shape each into a pretzel form.
- Fill a frying pan with water and bring to a gentle boil.
- For each cup of water used, add 1 tablespoon baking soda to the boiling water.
- Place the pretzels into the boiling water for 30 seconds, then remove and place on the prepared cookie sheet.
- Sprinkle coarse kosher salt over the pretzels.
- Bake in the oven for 8 minutes until golden brown.
- Pretzels can be frozen before baking if desired.
