  • 7 tsp. salt
  • 4 1/2 c. sugar
  • 5 c. water
  • 3 1/2 c. vinegar
  • 3 tsp. garlic salt
  • a pinch of alum

Instructions

  2. Stuff each hot pepper with hot dog pieces.
  3. Pack the stuffed peppers tightly into wide mouth quart jars.
  4. Make a mixture of water, sugar, vinegar, salt, garlic salt, and alum.
  5. Pour the mixture over the peppers, leaving 1/2 to 1 inch of headspace in each jar.
  6. Cold pack the jars for 5 minutes to seal.

Tips & Substitutions

When selecting hot peppers, choose a variety that suits your heat tolerance, such as jalapeños or serranos. For a milder option, consider using bell peppers. Ensure the jars are sterilized before packing to prevent spoilage. Mix the pickling brine thoroughly to dissolve the sugar and salt completely for balanced flavor. If you prefer a more intense garlic flavor, feel free to increase the garlic salt.

Serving Suggestions

Hot Puppies make an excellent appetizer at parties, pairing well with drinks or as a side to dishes like Creole Sausage Jambalaya. Serve them alongside crackers or cheese for a delightful snack platter. They can also be chopped and added to salads or served in sandwiches for an extra kick. Don’t forget to offer some dipping sauce for added flavor.

Storage & Reheating

Store the sealed jars in a cool, dark place for up to a year. Once opened, keep the jars in the refrigerator and consume within a few weeks for the best flavor and texture. To reheat, simply warm the stuffed peppers in a skillet over low heat or microwave them for a quick snack. They can also be served cold as a tangy appetizer.
