Ingredients

  • 1 cup raw chickpeas
  • 1 teaspoon baking soda
  • 1 cup tahini
  • 1/2 cup fresh lemon juice
  • 1 teaspoon salt
  • 2 cloves garlic
  • 1/2 teaspoon cumin
  • paprika

Instructions

  1. Soak chickpeas in water to cover with baking soda overnight. Add water to cover by several inches and simmer for one hour.
  2. Drain the chickpeas, reserving about one cup of the cooking water.
  3. Puree all ingredients except paprika in a food processor, adding 1/4 cup of the reserved water as needed.
  4. Place the hummus in a serving bowl and sprinkle with paprika.
