Ingredients

  • 16 small red skin potatoes
  • 1 large red onion
  • 4 tablespoons olive oil
  • 3 teaspoons rosemary
  • salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place the halved red skin potatoes in a roasting pan and drizzle with 2 tablespoons of olive oil. Season with salt and pepper, then add the red onion wedges.
  3. Roast for 20 minutes.
  4. Add rosemary to the potatoes and onions, then turn to coat evenly. Continue roasting for another 20 minutes until golden and tender.
  5. Transfer to a platter and serve.
