Ingredients

  • 3 lb. chicken, cut up
  • 2 Tbsp. olive oil
  • 1/2 cup mushrooms, sliced
  • 1 large onion, chopped
  • 1 Tbsp. tomato paste
  • mixed dried herbs (optional)

Instructions

  1. Cut the chicken into serving pieces.
  2. Saute the chicken in olive oil until well browned and tender, about 25 minutes.
  3. Remove the chicken from the pan and keep warm.
  4. In the same pan, saute the sliced mushrooms and chopped onion.
  5. Add the tomato paste and dried herbs (if using).
  6. Cook for about 4 minutes, then pour the sauce over the chicken.
  7. Serve with boiled noodles with poppy seed and a green salad.
