Ingredients

  • 1 Tbsp. olive oil
  • 1/2 chopped onion
  • 1 lb. boneless chicken breast, cut into 1-inch pieces
  • 1 tsp. ground cumin
  • 13 large pimento-stuffed green olives, halved crosswise
  • 1 tsp. dried cilantro
  • 2 cloves garlic
  • 1 red pepper
  • 1 c. long grain rice
  • 1 tsp. ground turmeric
  • 2 c. fat-free reduced-sodium chicken broth
  • 1 Tbsp. capers

Instructions

  1. Heat the olive oil in a large nonstick skillet over medium-high heat.
  2. Add the garlic, chopped onion, and red pepper; cook for 2 minutes.
  3. Add the chicken pieces and cook for 3 minutes.
  4. Stir in the rice, ground turmeric, and ground cumin; cook for 1 minute.
  5. Add the chicken broth, halved green olives, and capers; bring to a boil.
  6. Cover the skillet, reduce heat, and simmer until the broth has evaporated, about 17 minutes.
  7. Remove from heat and stir in dried cilantro before serving.
