- 13 large pimento-stuffed green olives, halved crosswise ⓘ
- 1 tsp. dried cilantro ⓘ
- 2 cloves garlic ⓘ
- 1 red pepper ⓘ
- 1 c. long grain rice ⓘ
- 1 tsp. ground turmeric ⓘ
- 2 c. fat-free reduced-sodium chicken broth ⓘ
- 1 Tbsp. capers ⓘ
Instructions
- Heat the olive oil in a large nonstick skillet over medium-high heat.
- Add the garlic, chopped onion, and red pepper; cook for 2 minutes.
- Add the chicken pieces and cook for 3 minutes.
- Stir in the rice, ground turmeric, and ground cumin; cook for 1 minute.
- Add the chicken broth, halved green olives, and capers; bring to a boil.
- Cover the skillet, reduce heat, and simmer until the broth has evaporated, about 17 minutes.
- Remove from heat and stir in dried cilantro before serving.
