Ingredients

  • dried large lima beans
  • salt
  • onion powder
  • small smoked sausages or large ones, cut into small pieces

Instructions

  1. Wash dried lima beans and cover with water.
  2. Add salt and onion powder to taste.
  3. Bring to a boil.
  4. Remove from heat and let sit for 1 hour.
  5. Add sausages and bring to a boil again.
  6. Lower heat and simmer covered for 1 to 2 hours until beans are tender, stirring only once or twice.
  7. Avoid frequent stirring to prevent beans from turning to mush.
