Creamy vanilla ice cream layered with crunchy rice cereal mixture and coconut, topped with sprinkles. Perfect for a cool, sweet treat that combines textures and flavors.

Ingredients

  • 2 1/2 cups Rice Chex, crushed
  • 1/2 cup butter, melted
  • 1 cup coconut
  • 1/2 cup brown sugar
  • 1/2 gallon vanilla ice cream

Instructions

  1. Mix crushed Rice Chex, melted butter, coconut, and brown sugar together.
  2. Press the mixture into the bottom of a 9 x 13-inch pan.
  3. Save a little of the mixture for sprinkles on top.
  4. Slice the vanilla ice cream into approximately 1/2-inch thick pieces.
  5. Lay the ice cream slices on top of the cereal mixture.
  6. Add sprinkles on top of the ice cream.
  7. Freeze until ready to serve.
