Ingredients

  • 7 lb. cucumbers, sliced thin
  • 5 lb. sugar
  • 5 qt. vinegar
  • spices
  • ice water

Instructions

  1. Soak the sliced cucumbers in 2 gallons of ice water with lime for 24 hours.
  2. Wash the cucumbers thoroughly.
  3. Change the water every hour for 4 hours, using only ice water.
  4. Bring the vinegar, sugar, and spices to a boil.
  5. Pour the hot vinegar mixture over the cucumbers.
  6. Let the cucumbers stand overnight in the mixture.
  7. Next morning, cook the cucumbers for 30 minutes over simmering heat until the vinegar is thick.
