Icebox Cinnamon Rolls

Sweet, cinnamon-flavored rolls with a tender crumb, topped with a delicate sugar icing, perfect for breakfast or brunch and loved by all ages.

Ingredients

  • 1 c. shortening
  • 3/4 c. sugar
  • 1 c. boiling water
  • 2 small cakes yeast
  • 1 c. cool water
  • 2 eggs
  • 6 c. flour
  • 1 tsp. salt
  • 1 Tbsp. vanilla

Instructions

  1. Add shortening and sugar to boiling water and let stand until lukewarm.
  2. Dissolve yeast in cool water; add to shortening mixture.
  3. Add eggs, vanilla, flour, and salt and mix well.
  4. Cover and refrigerate overnight.
  5. In the morning, roll out in rectangles and spread with melted butter, sugar, and cinnamon.
  6. Roll as for jelly roll and cut into 1/4-inch slices.
  7. Place in greased pan.
  8. Let rise until double in bulk.
  9. Bake in a 350°F oven for 25 minutes.
  10. Ice while hot with a thin confectioners' sugar icing.
