Ingredients

  • 2 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/3 cup salad oil
  • 1 egg
  • 1 cup crushed pineapple, drained
  • 1/2 cup maraschino cherries, quartered
  • 1/2 cup blanched almonds, slivered

Instructions

  1. Combine flour, sugar, baking powder, and salt in a bowl; stir well to blend.
  2. Combine milk, oil, and egg in a small bowl.
  3. Beat slightly.
  4. Add the wet ingredients all at once to the dry ingredients, stirring just until all dry ingredients are moistened.
  5. Fold in crushed pineapple, quartered maraschino cherries, and slivered almonds.
  6. Spread the batter in a greased 9 x 5 x 2-inch loaf pan.
  7. Let rest for 20 minutes.
  8. Bake at 350°F (175°C) for 65 to 70 minutes.
  9. Remove from pan and cool on a rack.
