Ingredients

  • 3 cups chopped raw apples
  • 1/2 cup water
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups sifted flour
  • 1/2 teaspoon allspice
  • 1 cup rolled oats
  • 1/2 cup seedless raisins

Instructions

  1. Combine chopped apples, water, and 1/2 cup brown sugar in a saucepan.
  2. Cook until apples are almost tender, about 5 minutes.
  3. Cool the mixture while preparing the remaining ingredients.
  4. Sift together flour, baking powder, baking soda, salt, and allspice.
  5. Stir in the remaining brown sugar, rolled oats, raisins, and chopped nuts into the dry ingredients.
  6. Add the cooled apple mixture, beaten eggs, and melted shortening or cooking oil to the dry ingredients.
  7. Stir just until the dry ingredients are moistened.
  8. Pour batter into a greased loaf pan and bake at 350°F (175°C) for about 20 minutes or until a toothpick inserted into the center comes out clean.
