Iced Rice

Ingredients

  • 3/4 c. long grain rice
  • 1/2 c. sugar
  • 2 1/2 c. milk
  • 1 tsp. vanilla
  • 1 1/4 c. cream
  • 1/2 oz. gelatin (1 envelope)

Instructions

  1. Measure rice and place into boiling water for 6 minutes. Measure milk and heat with vanilla until boiling.
  2. Measure sugar. Whip cream.
  3. Place mold into fridge.
  4. Put rice in milk and simmer 20 minutes.
  5. Add sugar and simmer 5 minutes.
  6. Soften gelatin in cold water and whip into hot rice.
  7. Place in fridge.
  8. When cool and thick, add whipped cream and put in mold.
  9. Garnish with fruit. Serves 8 to 10.
