Ingredients

  • 1 small box spices
  • 2 gallons cucumbers
  • 1/2 gallon vinegar
  • 2 tablespoons alum
  • 1 pint salt
  • 8 pints sugar

Instructions

  1. Pour salt over cucumbers.
  2. Bring 1 gallon of water to boil; pour over cucumbers.
  3. Stir cucumbers daily for 7 days.
  4. Remove cucumbers and wash.
  5. Put cucumbers back into jar and pour alum over them.
  6. Bring 1 gallon of water to boil and pour over cucumbers and alum. Remove from alum water the next day.
  7. On the first day, put on 1/2 gallon vinegar, 8 pints sugar, and spices.
  8. On the second day, pour off the syrup and bring it to boiling point.
  9. Pour the hot syrup over the cucumbers.
  10. On the third day, repeat pouring the hot syrup over the cucumbers.
  11. On the fourth day, heat the syrup again.
  12. Put pickles in jars and pour the syrup over the pickles.
