Ingredients

  • 3 cups sugar
  • 1/3 cup light corn syrup
  • 2 (20 oz.) cans sliced pineapple

Instructions

  1. Combine 2 cups sugar, light corn syrup, and 1 cup water in a heavy skillet.
  2. Over medium heat, cook until sugar is dissolved, stirring constantly.
  3. Cook, without stirring, to 232°F.
  4. Drop 4 pineapple rings at a time into the syrup and simmer slowly for 5 minutes.
  5. Turn the pineapple slices and simmer until translucent, about 7 minutes.
  6. Drain on a wire rack.
  7. Repeat until all pineapple slices are candied.
  8. Let stand, uncovered, for 24 hours.
  9. Sprinkle all sides with 1/2 cup granulated sugar.
  10. Allow to stand for another 24 hours, then sprinkle with the remaining sugar.
  11. Refrigerate, covered.
