Impossible Breakfast Pie

Ingredients

  • 1 lb. bulk pork sausage
  • 1 small onion, chopped (about 1/4 c.)
  • 2 1/2 c. frozen loose-pack hash brown potatoes
  • 1 c. (4 oz.) shredded Cheddar cheese
  • 1/4 c. chopped green onions with tops
  • 1 3/4 c. milk
  • 1 c. Bisquick baking mix
  • 4 eggs
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. Heat oven to 400°.
  2. Grease glass pie plate, 10 x 1 1/2-inches. Cook sausage and onion in 10-inch skillet, stirring frequently, until sausage is fully cooked; drain.
  3. Mix sausage mixture, potatoes and 1 cup cheese in pie plate.
  4. Beat remaining ingredients, except 1/4 cup cheese, with wire whisk or hand beater until smooth; pour into pie plate.
  5. Bake about 40 minutes or until golden brown and knife inserted in center comes out clean. Sprinkle with 1/4 cup cheese.
  6. Bake about 2 minutes or until cheese is melted.
  7. Yields 6 to 8 servings.
