Ingredients

  • 10 oz. frozen green beans or cut asparagus
  • 1 1/2 cups cubed fully cooked smoked ham
  • 1 cup creamed cottage cheese
  • 1 cup dairy sour cream
  • 1/4 cup margarine or butter, melted
  • 2 eggs
  • 1/2 cup Bisquick baking mix
  • 1 tomato, thinly sliced
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 10-inch by 1 1/2-inch pie plate.
  3. Rinse green beans or asparagus under cold water to thaw; drain thoroughly.
  4. Spread green beans and cubed ham in the prepared pie plate.
  5. In a blender or using a hand beater, beat together cottage cheese, sour cream, melted margarine or butter, eggs, and baking mix until smooth, about 30 seconds in a blender or 1 minute with a hand beater.
  6. Pour the mixture over the beans and ham in the pie plate.
  7. Arrange thinly sliced tomato on top of the mixture.
  8. Sprinkle grated Parmesan cheese over the tomato slices.
  9. Bake until a knife inserted in the center comes out clean, about 35 minutes.
  10. Cool for 5 minutes before serving.
