Ingredients

  • 1 lb. dry pinto beans
  • 1 (1 lb.) can tomatoes
  • 1 large onion
  • 8 slices bacon, cut in 2-inch lengths
  • 3/4 c. sliced celery
  • salt to taste
  • 3/4 tsp. cinnamon
  • 3 Tbsp. vinegar
  • 2 qt. water
  • 6 Tbsp. sugar

Instructions

  1. Wash beans, place in 6-quart kettle with 3 quarts water and bring to simmer.
  2. Cover.
  3. Cook 4 hours or until tender.
  4. Mix remaining ingredients with beans and cooking water.
  5. Place in 4-quart casserole.
  6. Cover and bake in 350° oven for 2 to 3 hours, or until done.
  7. Add water, if necessary.
  8. Serves 10 to 12.
