Indian Love Squash features tender acorn squash infused with ginger ale and aromatic herbs, offering a sweet, savory, and fragrant dish perfect for vegetable lovers and special dinners.

Ingredients

  • 2 medium acorn squash
  • 12 oz. dry ginger ale
  • 4 tsp. butter or oleo
  • 1 tsp. fine herbs (thyme, oregano, sage, rosemary, marjoram, basil)

Instructions

  1. Scrub the squash and cut in half lengthwise.
  2. Remove seeds and stringy portions from the squash.
  3. Pour ginger ale into a large skillet.
  4. Add the squash halves, cut side down, to the skillet.
  5. Cover the pan and steam over medium heat for 10 minutes.
  6. Arrange the squash, cut side up, in a shallow baking dish.
  7. Sprinkle each squash half with salt and pepper.
  8. Add a teaspoon of butter to each half and sprinkle with herbs.
  9. Bake at 350°F for 30 minutes, occasionally brushing with butter inside and outside of the squash.
