Ingredients

  • 4 Tbsp. butter or margarine

  • 1 1/2-inch piece cinnamon stick

  • pinch of salt
  • 1/2 c. sugar
  • 2 Tbsp. heavy cream
  • 1/2 tsp. saffron threads
  • 2 Tbsp. sliced blanched almonds
  • 2 Tbsp. raisins
  • 2 Tbsp. unsalted pistachios, blanched and sliced

Instructions

  1. Cook the rice partially in a large amount of boiling water.
  2. Drain the rice in a colander, then spread on a large plate or board to cool.
  3. Pop the cardamom pods between your fingers but leave them whole.
  4. Break the cinnamon stick into several pieces.
  5. In a saucepan, melt the butter and add the cooled rice.
