Individual quick cheese cakes are creamy, tangy treats with a buttery vanilla wafer base, topped with sweet cherry pie filling — perfect for quick desserts or special occasions.

Ingredients

  • 2 (8 oz.) pkg. cream cheese
  • 3/4 cup sugar
  • 2 eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 1 box vanilla wafers
  • 1 (21 oz.) can cherry pie filling

Instructions

  1. Combine the cream cheese, sugar, eggs, lemon juice, and vanilla and mix well.
  2. Put cupcake papers in muffin pans.
  3. Place one vanilla wafer in each cupcake paper.
  4. Fill each cup 3/4 full with the cheese mixture.
  5. Bake at 375°F for 15 to 20 minutes.
  6. Allow to cool and top with pie filling.
