Ingredients

  • 1/4 cup instant potato flakes
  • 1/4 cup water
  • 3 1/2 cups confectioners sugar

Instructions

  1. Combine instant potato flakes and water in a mixing bowl.
  2. Beat until the mixture holds together and resembles mashed potatoes.
  3. Gradually add confectioners sugar, a cup at a time, until the mixture can be formed into a ball.
  4. Roll the potato dough into an 8 x 12-inch rectangle.
  5. Spread peanut butter over the dough.
  6. Roll up the dough like a jelly roll, starting with the 12-inch side.
  7. Wrap with plastic wrap and refrigerate until firm.
  8. Slice into 1/2-inch pieces.
