Ingredients

  • 1 acorn squash
  • 1 or 2 butternut squashes
  • 1 cup water
  • 1 small can evaporated milk
  • 3 to 4 cups milk
  • 1 1/2 sticks margarine or butter
  • nutmeg
  • allspice

Instructions

  1. Melt margarine or butter in a heavy skillet over low heat.
  2. Add flour and stir constantly until the roux turns dark brown, but not burned.
  3. Add seasonings such as nutmeg, allspice, and cinnamon to the roux.
  4. Gradually add water, evaporated milk, and milk to the roux, stirring constantly to create a smooth soup base.
  5. Add chopped acorn and butternut squash to the soup and simmer until the squash is tender.
  6. Season with salt and pepper to taste, and serve hot.
