Ingredients

  • 3 to 4 lb. corned beef brisket
  • 1 large head cabbage
  • 6 ears corn
  • 12 medium-sized white Irish potatoes

Instructions

  1. Put the corned beef brisket in a 12-quart stockpot and fill with water.
  2. Bring the water to a boil.
  3. Reduce heat and simmer the brisket for 3 to 4.5 hours until tender.
  4. Cut the cabbage into quarters and add to the pot.
  5. Add the potatoes and cook for about 30 minutes.
  6. Add the ears of corn and cook for an additional 15 minutes.
