Ingredients

  • 1 lb ground beef
  • 3/4 lb ground pork
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1 cup sherry
  • 1/2 cup olive oil
  • 2 garlic cloves
  • 1 onion
  • 1 green pepper
  • 1/4 cup capers
  • 1/2 cup pitted olives
  • 1 bay leaf
  • 1 can tomato paste
  • 1/2 cup raisins
  • 1/2 cup blanched almonds
  • dash of oregano

Instructions

  1. Mix ground beef and pork with salt and pepper.
  2. Add 1/2 cup of sherry and let stand for 2 hours.
  3. Sauté garlic, onion, green pepper, capers, and olives in olive oil.
  4. Add the meat mixture and remaining ingredients including tomato paste, raisins, almonds, bay leaf, oregano, and cumin.
  5. Cook the mixture for 1 hour over low heat.
  6. Remove from heat and stir in the remaining 1/2 cup of sherry.
  7. Let stand for 5 minutes before serving.
