Ingredients

  • 1 stick oleo or butter
  • 1/2 cup vegetable shortening
  • 2 cups sugar
  • 5 eggs, separated
  • 1 teaspoon vanilla
  • 1 cup buttermilk
  • 2 cups flour
  • 1 cup chopped nuts
  • 14 oz can coconut

Instructions

  1. Cream oleo, shortening, sugar, and egg yolks until well combined.
  2. Beat in vanilla and buttermilk, then add flour alternately until the batter is smooth.
  3. Fold in chopped nuts and coconut.
  4. Beat egg whites until stiff peaks form and gently fold into the batter.
  5. Pour the batter into a greased pan sprayed with Pam.
  6. Bake at 325°F until done, but not overdone, approximately 40 minutes.
