Instructions
- Grind or chop raisins and cranberries.
- Put filling ingredients, except vanilla, into a saucepan.
- Cook over low heat about 8 minutes.
- Remove from heat.
- Add vanilla and let cool.
- Pour filling into a pastry-lined pie plate.
- Cover with top crust or lattice crust.
- Make slits or air vents in the top crust.
- Bake in a 425°F oven for 30 minutes, until browned.
- Serve plain or with vanilla ice cream or whipped cream.
- Taste the filling and add 1/4 more sugar if it is too tart.
