Ingredients

  • 1 cup rice, drained
  • 2 (16 oz.) cans creamed corn
  • 1 can whole corn (optional)
  • 1 stick oleo
  • 1 medium onion, chopped
  • 1 cup chopped celery
  • 1 chopped bell pepper

Instructions

  1. Cook the rice until tender and set aside.
  2. Sauté chopped onion, chopped celery, and chopped bell pepper until softened.
  3. In a mixing bowl, combine cooked rice, creamed corn, whole corn (if using), sautéed vegetables, and jalapenos to taste.
  4. Transfer the mixture to a baking dish and sprinkle grated cheese on top.
  5. Cut the oleo into small pieces and dot over the casserole.
  6. Bake in a hot oven until the cheese melts and is bubbly, about 20-30 minutes.
