  1. Cook squash and onion together in salted water until tender; drain thoroughly.
  2. Crumble the corn bread muffins and add to the cooked squash and onion mixture.
  3. Beat the egg in a large bowl.
  4. Add the squash mixture and bread crumbs to the beaten egg.
  5. Mix everything thoroughly until combined.
  6. Heat vegetable oil in a deep fryer until very hot.
  7. Take spoonfuls of the squash mixture and roll them in bread crumbs on wax paper.
  8. Drop the coated croquettes into the hot oil.
