Janean's Clam Chowder is a hearty, creamy soup featuring tender clams, potatoes, mushrooms, and onions, perfect for comforting meals and seafood lovers.

Ingredients

  • 2 cans minced clams
  • clam juice
  • 2 cups diced potatoes
  • 1 quart half and half
  • 1 chopped onion

Instructions

  1. In a saucepan, add clam juice and enough water to cook the potatoes in. Bring to a boil and cook until tender.
  2. Fry bacon until crisp, then set aside.
  3. In the bacon fat, fry chopped onions until translucent.
  4. Set aside the cooked onions.
  5. Fry sliced mushrooms until browned, then set aside.
  6. Combine all ingredients except clams in the saucepan and bring just to a boil.
  7. Add a flour and water thickener to the mixture and stir well.
  8. Add the minced clams and cook for 8 to 10 minutes, stirring often.
  9. Season with salt and pepper to taste.
