Ingredients

  • 16 eggs
  • 4 tall cans evaporated milk
  • 2 cups whipping cream
  • 6 cups sugar
  • 1 tablespoon vanilla
  • pinch of salt

Instructions

  1. Beat the eggs in a mixing bowl.
  2. While stirring, add the evaporated milk, whipping cream, sugar, vanilla, and a pinch of salt.
  3. Place the mixture in the top of a double boiler over hot, not boiling, water.
  4. Cook, stirring constantly with a wooden spoon, until the mixture coats the back of the spoon.
  5. Be careful not to overcook to prevent curdling.
  6. Remove from heat and allow to cool.
  7. Can be frozen in an ice cream freezer if desired.
