A creamy, citrus-flavored cheesecake with a graham cracker crust, perfect for gatherings and special occasions, combining tangy jello with rich cream cheese and chilled milk.

Ingredients

  • 1 pkg. graham crackers (about 22)
  • 3 Tbsp. powdered sugar
  • 1/2 stick margarine (soft)
  • 1 (3 oz.) pkg. lemon or pineapple jello
  • 8 oz. pkg. cream cheese
  • 1 c. sugar
  • 1 Tbsp. vanilla or lemon flavoring
  • 1 can Pet evaporated milk, very chilled

Instructions

  1. Crush the graham crackers into fine crumbs.
  2. Mix the graham cracker crumbs with powdered sugar and toss with softened margarine until well combined.
  3. Press the mixture into a 13 x 9-inch buttered pan to form the crust.
  4. Bake the crust for 10 minutes at 325°F (163°C).
  5. Remove from oven and let cool.
  6. In a small bowl, dissolve the lemon or pineapple jello in 1 cup boiling water.
  7. Refrigerate the jello mixture until it appears like egg whites, about 1-2 hours.
  8. In a mixing bowl, beat the cream cheese until smooth.
  9. Gradually add sugar and vanilla or lemon flavoring, mixing well.
  10. Fold in the chilled, whipped evaporated milk until smooth.
  11. Pour the cream cheese mixture over the cooled crust.
  12. Gently pour the cooled jello mixture over the filling.
  13. Refrigerate until set, about 4 hours or overnight.
