- Crush the graham crackers into fine crumbs.
- Mix the graham cracker crumbs with powdered sugar and toss with softened margarine until well combined.
- Press the mixture into a 13 x 9-inch buttered pan to form the crust.
- Bake the crust for 10 minutes at 325°F (163°C).
- Remove from oven and let cool.
- In a small bowl, dissolve the lemon or pineapple jello in 1 cup boiling water.
- Refrigerate the jello mixture until it appears like egg whites, about 1-2 hours.
- In a mixing bowl, beat the cream cheese until smooth.
- Gradually add sugar and vanilla or lemon flavoring, mixing well.
- Fold in the chilled, whipped evaporated milk until smooth.
- Pour the cream cheese mixture over the cooled crust.
- Gently pour the cooled jello mixture over the filling.
- Refrigerate until set, about 4 hours or overnight.
