- Remove cream cheese from fridge.
- Put evaporated milk in freezer.
- Add 1 cup hot water to lemon Jell-O and stir until dissolved.
- Place in fridge until syrupy.
- Whip the evaporated milk until it peaks.
- In a separate bowl, beat the cream cheese with sugar and vanilla until smooth.
- Gradually add the whipped evaporated milk to the cream cheese mixture and blend well.
- Mix the Jell-O with the whipped evaporated milk and cream cheese mixture.
- Optionally, fold in crushed pineapple if desired.
- Press half of the crushed graham crackers into a 9 x 13-inch dish and let stand.
- Pour the cheese and Jell-O mixture over the cracker crust.
- Sprinkle the remaining crushed graham crackers over the top and refrigerate until set.
