Jello Cheese Cake

Ingredients

  • 8 oz. cream cheese
  • 1 c. sugar
  • 1 large can evaporated milk
  • 1 (3 oz.) pkg. lemon Jell-O
  • 1 c. hot water
  • 2 tsp. vanilla
  • 32 graham crackers
  • 1 sq. butter

Instructions

  1. Remove cream cheese from fridge.
  2. Put evaporated milk in freezer.
  3. Add 1 cup hot water to lemon Jell-O and stir until dissolved.
  4. Place in fridge until syrupy.
  5. Whip the evaporated milk until it peaks.
  6. In a separate bowl, beat the cream cheese with sugar and vanilla until smooth.
  7. Gradually add the whipped evaporated milk to the cream cheese mixture and blend well.
  8. Mix the Jell-O with the whipped evaporated milk and cream cheese mixture.
  9. Optionally, fold in crushed pineapple if desired.
  10. Press half of the crushed graham crackers into a 9 x 13-inch dish and let stand.
  11. Pour the cheese and Jell-O mixture over the cracker crust.
  12. Sprinkle the remaining crushed graham crackers over the top and refrigerate until set.
