- Preheat oven to 375°F.
- Grease a jelly roll pan and line it with aluminum foil.
- In a bowl, blend flour, baking powder, and salt.
- Set aside. In a small bowl, beat eggs until thick and lemon colored.
- Pour eggs into a large bowl.
- Gradually beat in sugar.
- Blend in water and vanilla on low speed.
- Slowly mix in dry ingredients until batter is smooth.
- Pour batter into the prepared pan.
- Bake for 12 to 15 minutes.
- Loosen edges and turn the cake upside-down onto a towel sprinkled with confectioners sugar. Remove the paper.
- Trim off stiff edges.
- While hot, roll the cake and towel from the narrow end.
- Cool completely, then unroll, spread with jelly, and re-roll.
