Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup sugar
  • 1/3 cup water
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 375°F.
  2. Grease a jelly roll pan and line it with aluminum foil.
  3. In a bowl, blend flour, baking powder, and salt.
  4. Set aside. In a small bowl, beat eggs until thick and lemon colored.
  5. Pour eggs into a large bowl.
  6. Gradually beat in sugar.
  7. Blend in water and vanilla on low speed.
  8. Slowly mix in dry ingredients until batter is smooth.
  9. Pour batter into the prepared pan.
  10. Bake for 12 to 15 minutes.
  11. Loosen edges and turn the cake upside-down onto a towel sprinkled with confectioners sugar. Remove the paper.
  12. Trim off stiff edges.
  13. While hot, roll the cake and towel from the narrow end.
  14. Cool completely, then unroll, spread with jelly, and re-roll.
