Ingredients

  • 1 c. shortening
  • 1 c. brown sugar
  • 1 c. sugar
  • 2 eggs
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1/2 c. nuts
  • 1 (No. 2) can crushed pineapple
  • 3 c. plus 2 Tbsp. flour
  • 1 tsp. baking soda
  • 2 tsp. baking powder

Instructions

  1. Mix the shortening, brown sugar, and sugar until well combined.
  2. Add eggs and vanilla, and mix thoroughly.
  3. Stir in the crushed pineapple and nuts.
  4. Gradually add the flour, baking soda, baking powder, and salt, mixing until the dough is smooth. If the cookies seem too thin, add a little more flour.
  5. Drop spoonfuls of dough onto a greased cookie sheet.
  6. Bake at 375°F (190°C) for 10 minutes or until golden brown.
