A rich, fruity no-bake fruitcake featuring pecans, candied cherries and pineapple, shredded coconut, and a sweet condensed milk base, perfect for festive occasions or as a sweet treat.

Ingredients

  • 3 cups pecans
  • 2 (7 oz.) packages pitted dates
  • 3/4 pound candied cherries
  • 3/4 pound candied pineapple
  • 2 packages shredded coconut
  • 1 can sweetened condensed milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon almond extract

Instructions

  1. Line a loaf pan with heavy brown paper.
  2. Grease the paper well.
  3. Chop pecans, dates, cherries, and pineapple into medium-sized pieces.
  4. Place all ingredients in a mixing bowl.
  5. Mix until blended.
  6. Turn into the prepared loaf pan and press with a spoon or your hand to level the top.
